Week 1 Jan 20, 2014 - Jan 26, 2014

This week started on MLK day. It helped to be off that day to get the plan going because there is more food planning than I have ever done in my life. I am the type that wonders aimlessly down the aisle of the grocery store picking up what I think "looks good" only to run out of food mid week and opt for fast or frozen meals to supplement my poor food planning.

I made a spread sheet of the meal plan from the books. Got the week all planned out grocery list and all. I had to go to Whole Foods, and Smiths to get everything specifically on the lists. It was a bit pricey to begin but what is my health worth??? Um...it's priceless, if you don't have your health what do you have??? Also convinced my husband to do this journey with me. That helps a lot.

So week 1, I thought oh man how am I going to eat all this food??? How am I going to prepare all this food??? I work full time and have a 2 year old, I'm so going to fail this. Am I going to like any of this??? Negatives, negatives, more and more negatives. Finally screw it I'm going to give it everything I've got, even if I have to stay up to make sure my lunch is ready for the next day so be it!

Tacos + Guac
Chicken Tortilla Soup
Beef Stir Fry

I made it through week 1 and guess what??? I've lost 8lbs!!!! Week 2 here I come!
